Grass-Fed Macho Taco Burgers

Time for Dinner: Grass-Fed Macho Taco Burgers

It's time for dinner and I am craving grass-fed beef tacos, but my husband wants burgers and my kids want cheese. For dinner. Quite the dilemma. So instead of making three separate meals because seriously, who has time for that, we mashed all of our cravings together as shown in the recipe below and I would like to call it the "Macho Taco Burger". I guess you could technically use store bought or grain fed ground to make the same recipe, but there are major, life altering reasons why my family chooses 100% grass-fed meat. I realize we live on the farm and of course we would buy our own meat, not to mention that it is the most delicious beef I have ever had, but that is only a tiny reason why we do.

Our family eats A LOT of ground. I mean, when I bust out a steak, the creatures of my household think we are having "fancy dinner". Plus, my almost 2 year old can't chew steak yet, so ground it is. We have to be super creative in order for meals not to get boring. The thing I really love about grass-fed ground versus grain fed or whatever else they feed cows in feedlots, is that I know my family is eating clean food. I know there aren't any added hormones that are going to make my daughters "bloom" too early or antibiotics that may travel into our bodies. I know exactly what grasses the animals graze on and that the grasses are not genetically modified. I know that BECAUSE we are on the farm and see the process every day. I know the work it takes to invest in a business that doesn't cut corners and a family that cares about the health of people everywhere.

I want to support my family's health, farmers who farm the right way, and my taste buds because, let's face it, they control everything. Check it...

Ingredients:

  • 1 pound BF Farms' grass-fed beef
  • 1 egg per burger
  • Avocado slices
  • Tomato slices
  • Bacon
  • Goat cheese crumbles
  • Burger buns
  • 1 TBS Cumin
  • 1 TS Chili Powder
  • 1 TS Garlic Powder
  • Salt and Pepper

Preparation:

  1. Chop tomatoes and slice avocados and set aside.
  2. Mix spices in with the ground beef. Knead with hands and create patties.
  3. Pull out a medium and a large skillet. In the large skillet, cook the beef patties on medium heat.
  4. At the same time- if you can -in the medium skillet, cook bacon on medium-low. Remove bacon. DO NOT DRAIN. Crack eggs over pan and fry eggs in the bacon grease, splashing grease onto the tops of the eggs. Remove eggs.
  5. Put all of the ingredients together and DEVOUR!

Lamb: A Dining Delicacy

Lamb: A Dining Delicacy

Lamb is and always has been a dining delicacy for many cultures and has recently been making its way into mainstream American restaurants with great flare! We are now seeing lamb burgers, rack of lamb appetizers, pickled lamb tongues, lamb sausage and more! Not to mention, the rising awareness of the importance and health benefits of grass-fed meat.

Why? What's all the hype?

Food has become a hobby. The most unique, authentic, and well displayed foods tend to give "foodies" and those who love to navigate the cuisine of the area great conversation and something to brag about! Grass-fed lamb is becoming quite popular, and not only for dining out.

Thanks to the internet, Pinterest, and food bloggers everywhere, we have access to some of the most imaginative recipes from kitchens in homes all over the world. With a small search, anyone can find a new and exciting lamb recipe to experiment with.

I recently spoke with one of our most valued customers about her family's upbringing regarding lamb and she emphasized how valued and special it was when they were able to consume lamb at the dinner table. While others gathered around the typical turkey or ham, her family brought in lamb. "It was a delicacy! We were privileged to be able to have it."

Can you imagine that possibility for your family? What about hosting dinner parties or even barbecues? Is it time to do something different? Offering the highest quality grass-fed lamb is something we are very proud of here at BF Farms and we love that we can help bring it to your dinner table!

Is All Grass-Fed Created Equal?

Is All Grass-Fed Created Equal?

Did you know that not all grass-fed meat is created equal? Marketing companies and the food industry have realized the trend to eating grass-fed beef. People want to eat healthier. People want ethically raised food. The problem is that in order to capitalize on these trends, they have mislead us with popular labels. If we don't ask the right questions, we may be deceived.

We are one of the only farms in our area that produce 100% grass-fed and grass-finished beef and lamb. When I share what we do with friends and strangers around town, I often hear things like, "Oh, I've seen grass-fed meet sold at the grocery store or at the health food store!" to which I respond, "Is it also finished on grass?"

The loophole in the food industry right now is that as long as an animal has eaten grass at all in it's lifetime, it can be considered "grass-fed". It's marketing at its finest.

You see, all cattle begin by eating grass and nursing from mama until about 6-12 months. After that period of time, many farmers choose to fatten the animal on grain until it goes into processing. These animals are not 100% grass-fed. If they are sent to a feedlot, it also becomes a sanitary issue as mentioned in our previous blog, "Safe Beef".

At BF Farms we allow the animals to continue eating grass their entire life. The main difference is in the nutrition you are receiving. You eat what "Norma Jean" eats. Here are the health benefits to 100% grass-fed beef and lamb vs an animal finished on grain:

  • Higher levels of Omega 3s - an essential fatty acid that reduces inflammation and lowers cholesterol
  • Higher levels of CLA - a fatty acid that improves brain function and reduces the risk of cancer
  • Higher levels of vitamins and minerals including vitamins A and E
  • Lower levels of Omega 6s - a fatty acid that causes inflammation and raises cholesterol
  • Lower levels of cholesterol elevating saturated fatty acids
  • Lower levels of overall fat content

There is a difference and we want you to benefit from a 100% grass-fed animal and all of the nutrition it brings! We work hard so that our animals receive a grass-fed diet year round. We work hard so that we can be proud of that "grass-fed" label. So next time you're at the grocery store, health food market, or farmer's market, ask the important question: "Is it also grass finished?"

Diana's Beef and Lamb Chili

Diana's Beef and Lamb Chili Recipe

Anyone who knows me knows that I love chili!  Bean chili, meat chili and definitely one that has both, but now…using BF Farms lamb and beef it’s even better than ever.  Come with me on the journey of this awesome chili.

Ingredients:

1 lb. BF Farms lamb sausage

1 lb. BF Farms ground beef

1 ½ red onions chopped

3 cloves of garlic chopped

3 cups of black beans - I cooked these in the crockpot over night with water, salt & pepper, and 4 tbsp. of good balsamic vinegar.  I use extra water, so that I have a nice black bean liquid to use in the chili - Or use canned, with liquid.

1 can of beer

Spices - I don’t measure spices, because I do it to taste.  But in the chili I used cumin, chili powder, a dash of ground cloves and S&P.  I taste it about half way through the cooking process, for adjustments to these spices.

Preparation:

First I like to brown the lamb sausage.  It has a few of its own spices, so I don’t season it at all.  It leaves behind some nice fat, and flavor to brown the beef in next. So I remove the lamb and brown the beef.  Once that is done, I remove the beef and add the chopped onion, garlic and spices.  This softens the onion & garlic and blooms the spices.  I cook them for about 5 minutes.  I then add the black beans with liquid and the browned meats.

A lot of times, I add canned tomatoes to my chili, but this chili I like it without.

I use the can of beer to make sure I have enough flavorful liquid to mostly cover the chili.  You could also use broth of any kind - or red wine.  I used ¾ of a can of beer.

I put a lid on this and put into a 275 degree oven for about 1.5 hour - taking the lid off the last 30 minutes, depending on the amount of liquid.

I like to serve this with a dollop of sour cream and/or shredded cheese.

Diana's Grass-Fed Beef and Lamb Burger Recipe

Recipe for Diana's Grass-Fed Beef and Lamb Burgers

Have you ever tried combining the hearty taste of ground beef with the immense flavor of lamb sausage to create a kickin' burger?! Well, our good friend Diana has. She has been experimenting with various recipes using BF Farms grass-fed beef and lamb and we love it!

Fall is here and the with the cool air upon us, it's the perfect time to grill or cook over a campfire. Gather your people - family, friends, neighbors - and try this super fun recipe!

Ingredients:

  • 1lb. grass-fed beef
  • 1lb. grass-fed lamb sausage (already seasoned)
  • 1 egg beaten
  • salt and pepper
  • balsamic vinegar
  • garlic powder

Preparation:

Combine ingredients in a medium sized bowl. The lamb sausage is spicy, so use less sausage if dining with sensitive pallets. Create burger patties and grill at the temperature that you prefer for a regular beef patty. Keep in mind, that lamb has better flavor when slightly under cooked.

Enjoy!
